Thaumatin's safety profile is the product of its fundamental nature as a protein. Proteins are the body's native building blocks — the human body has extensive, highly optimized mechanisms for digesting, absorbing, and utilizing dietary proteins. When you consume thaumatin, your digestive system sees a 207-amino-acid protein chain. It does what it always does with protein: it breaks it down completely into amino acids and absorbs them.

There are no chemical byproducts of concern. No phenylalanine accumulation (as with aspartame). No methanol release. No formaldehyde. Just amino acids — the same building blocks found in any food protein you already eat.
